The Wines: (Fall 1996)

Whites:
1995 Sauvignon Blanc: Barrel fermented for added richness and texture, a perfect example of the Columbia Valley's affinity to produce Sauvignon Blanc with purity of fruit and natural, crisp acidity. Bouquet and flavors of citrus and melon, with a creamy and slightly oaky body. The overall impression is very fresh, yet full bodied.

Varietal: Sauvignon Blanc, Chardonnay; Appellation: Columbia Valley; Vineyard: 60% Sauvignon Blanc Klipsun Vineyard, 25% Sauvignon Blanc Badger Mountain Vineyard, 15% Chardonnay Cottonwood Creek Vineyard; Harvest date: 9-3-95; Yeast: Prise de Mousse & EP2; Malolactic Fermentation: 30% complete; Oak: 60% barrel fermented in new, 1 & 2 year old French oak; Time in wood: 5 months; Surlie: 5 months post fermentation; T/A: 0.70 gr./100ml, pH: 3.1; Bottled: 4-4-96;

1995 Chardonnay: Lush, ripe flavors of apple, melon and pear are framed inside a firm package of oak and natural, crisp acidity. An opulent and rich Chardonnay. Yeast used was a combination of montrachet and prise de mousse. Forty percent of the wine was subjected to malolactic fermentation, and 75% was barrel aged for six months (four months sur lie) in new to four year old French oak.
Varietal: Chardonnay; Vineyard: 25% Sagemoor, 23% Cottonwood, 15% Klipsun, 10% Portteus, 7% Ciel du Cheval, 8% Conner Lee, 12% other Chardonnay; harvested 9/20/95; bottled 5/86; TA 0.73, pH 3.4, RS 0.06%.

1994 Reserve Chardonnay (Cottonwood Creek Estate): Ripe and concentrated pear, spice and vanilla notes are followed by a framework of toasty, buttery oak. Smooth, soft creamy finish. Yeast used was prise de mousse. 100% complete malolactic fermentation, 100% barrel fermented for seven months in new, one year old, and two year old barrels (2-1/2 months sur lie). Varietal: 100% Chardonnay; Vineyard: Cottonwood Creek; harvested 10/2 94; bottled 8/95; TA 0.71, pH 3.3.

Reds:
1994 Cabernet Franc: A new release of this variety from our Cottonwood Creek Estate Vineyard. Available only through the tasting room and select restaurants. Elegant and supple with lovely fruity flavors and a very aromatic nose. Great with salmon or summer pastas.
Varietal: Cabernet Franc, Merlot; Appellation: Columbia Valley; Vineyard: 82% Cabernet Franc Cottonwood Creek, 18% Merlot Klipsun Vineyards; Harvest Date: Oct-1994; Yeast: Premier Cuvee; Malolactic Fermentation: 100% complete; Oak 20 months in 35% new oak, 70% American, 30% French; Fining: Eggwhite; T/A: 0.57 gr./100ml, pH: 3.7; Bottled: Jun-1996;

1994 Cabernet Sauvignon: A much awaited release following the highly acclaimed '92 & '93 vintages, this is a Cabernet Sauvignon that compares with the world's finest red wines. A massive wine with very concentrated layers of pure fruit and toasted oak complexity. The power and the depth will last and evolve for many years.
Varietal: Cabernet Sauvignon, Merlot; Appellation: Columbia Valley; Vineyards: 75% Cabernet Klipsun Vineyards, 10% Cabernet Portteus Vineyards, 11% Merlot Klipsun Vineyards, 4% Merlot Ciel du Cheval Vineyards;

1994 Merlot: A small crop produced perfectly ripe and concentrated Merlot. Truly a classic vintage. Big and bold in style with mouthfuls of ripe tannins and black cherry fruit. A full bodied Merlot of great complexity and depth.
Varietal: Merlot, Cabernet Sauvignon; Vineyards: 62% Klipsun Vineyards Merlot, 13% Ciel du Cheval Merlot, 12% Klipsun Vineyards Cabernet Sauvignon, 13% Portteus Vineyards Cabernet Sauvignon; Appellation: Columbia Valley; Average Harvest date: 9-10-94; Yeast: Premier Cuvee; Malolactic Fermentation: 100% complete; Oak: 20 months in 40% new oak, 50% American & 50% French; Fining: Eggwhite; T/A: 0.64 gr./100ml, pH: 3.45; Bottled: Jun-1996;
