All wines will be shipped via UPS ground. UPS prefers business address to deliver. You must be 21 years old or older to order. An adult signature is required upon receipt. Notes for 1999 Isenhower Cellars Columbia Valley Merlot Composition: 75% Merlot from three low yielding Walla Walla Vineyards: Forgotten Hills, Spring Valley, and Vanessa’s Vineyard. 20% Cabernet Sauvignon from Red Mountain. 5% Cabernet Franc from the Dionysis Vineyard. Fermentation: Destemmed with 10% of stems added back to the must to add a layer of spice. Inoculated with yeast native to Bordeaux. Fermented in small bin, open top fermentors with pigeage 3 times daily. Pressed at 2 brix in an old fashion basket press. Malo-lactic fermentation completed in barrel. Elevage: Aged in a combination of French and American oak barrels, 30% new. The French oak was from the Nevers Forest. American oak was from Missouri and Minnesota. Racked three times. Unfined and unfiltered. Wine Notes: Aromas of dark red cherries, plums, and blueberries rise above subtle oak nuances. Rich and full fruit in the mid-pallet with and a long, smooth tannin finish. Terrific now with decanting or lay down for extended aging. Total Acidity 0.62 g / 100 ml pH 3.6 Bottling Date 1/23/2001 Notes for 1999 Isenhower Cellars Walla Walla Valley Syrah Composition: 100% Syrah from Patina Vineyard, Walla Walla. Patina is a small vineyard located just south of Walla Walla. We are honored that Patina agreed to sell us some of their excellent Syrah, as the owners also sell their Syrah to Cayuse and Seven Hills Winery. Fermentation: Destemmed with 10% stems added back to the must. Small bin ,open top fermentation. Pigeage three times a day. The wine spent 9 days on the skins then pressed in an old fashion basket press. Several Rhone derived yeasts were used to ferment the must and increase complexity. Elevage: Aged in two to three year old French oak barrels. Racked three times. Unfined and Unfiltered. Notes: Spicy and white and black pepper nose with hints of French oak on the nose. Round in the mouth with flavors of raspberries and spices and a soft tannin finish. Excellent with summertime barbecue dining. This Syrah is going to go fast as it is a big hit in Seattle Restaurants! Hello everyone! It was pointed out to me that the order e-mail lists the 1999 Walla Walla Valley Syrah listed as a "Merlot". This is incorrect. The wine is 100% Syrah.
