This will be an evening of fine cigars, fine food, and of course, fine wines, all under our grape arbor. We'll light the smoking lamp at 6pm and after a brief introduction to the evening's protocol, start with hors s'oeuvres and a sample of our triple cream sherry. We'll follow this with a cholesterol enhancing BBQ, with special wines to match the cuisine, followed by the traditional port and cheese course. You'll get three quality cigars to smoke or take home. If you are a cigar/wine aficionado, I think you will find this one of the most delightful Indian summer evenings you'll ever spend. A little less than 20 years ago, I stood at the door of the winery and watched a load of Gewurztraminer grapes being delievered from our vineyard- this was the first commercial batch I had to make into wine for myself and I don't mind telling. it was more than a little unnerving. But from the very start, we've had customers and friends help us pick and crush- easing the burden and making this a very rewarding time. Consequently, our 22 Annual Commune with the Vines will be Saturday, Oct. 4. We'll be picking Cabernet from Hugh and Kathy Shiels DuBrul Vineyard on the Roza above Outlook- one of the greatest views of the valley. How does our harvest party work? We meet at the winery beginning at 9 am for coffee and noshes. Promptly at 10, we caravan to the vineyard. On arrival, we give you a brief but thorough schooling on the subtle art of grape harvesting. We then start throwing grapes in earnest. A couple of hours later, we break for one of our famous and sumptuous lunches with home made breads, basiled tomatoes, fresh fruit, etc.- complete with the appropriate libations. After lunch, we whip you back into the vineyard to finish picking and swamping. Around 3 or 4, we head back to the winery and crush a grape or two. We finish off the day with hors d'ouvres and a glass under the arbor. You'll take home fond memories, a souvenir glass, and a change in attitude that will never allow you to look at a bottle of wine quite the same way again. I guarantee you'll be sated and jaded or double your sunscreen back! Culinary notes: We've had a great crop of Basil this year- Genovese, Lettuce Leaf, Mexican (vewry good for dalsa), and lemon-(great flavor but fades fast after picking)- we have all of these varieties available at the winery in 1/2lb bags (enough for 2-3 batches of pesto) for $2.99- free recipes for pesto and much more too. We've been making cultured vinegar for the last ten years and release some last year. Barrel aged red and white vinegar are the backbone of this venture- if you've never used a high quality vinegar in cooking, you really should- the complex flavors really enhance the most simple dressings and sauces- our flavored vinegars- made with herbs and fruit from our garden are also great enhancements to cooking. The piece de resistance, however, is Balsamic Vinegar. We start this vinegar by boiling down fresh grape juice and placing it in a barrel with a little vinegar starter. After a year, a portion of the juice has metamorphosed into vinegar. From there it goes into progressivley smaller barrels becoming more complex and intense- a fair amount evaporate decreasing the volume considerably. Balsamic vinegar has a very rich, complex aroma and is used sparingly- my wife tried putting some behind her ear, but it attracted italians, so she had to stop.
